Salted Caramel Ganache Brownies
Ingredients
For the brownies:
- 10 Tbs. (1 1/4 sticks) unsalted butter, cut into pieces
- 1 1/4 cups (7 1/2 oz / 225 g) light brown sugar, firmly packed
- 2 eggs, at room temperature
- 3/4 cup (2 1/4 oz / 62 g) cocoa powder
- 6 Tbs. (1 1/2 oz / 45 g) all-purpose flour
- 3/4 tsp. salt
- 2 tsp. vanilla extract
For the chocolate ganache:
- 1 cup (6 oz / 170 g) dark chocolate chips
- 1/2 cup (4 fl. oz / 125 ml) heavy cream
- 1/2 tsp. vanilla extract
To finish:
- Salted caramel or dulce de leche sauce
- Flaky sea salt for garnish
Directions
- Preheat oven to 350°F (180°C). Grease a 9-by-13-inch baking dish with nonstick spray.
- In a large microwave-safe bowl, combine butter and brown sugar. Microwave in 30-second intervals, whisking between, until melted and glossy.
- Add eggs, whisk until smooth and slightly lightened in color.
- Fold in cocoa powder, flour, salt, and vanilla just until combined. Spread batter evenly in the pan.
- Bake 15–20 minutes, until edges are set and a toothpick comes out with a few moist crumbs. Cool completely.
- For the ganache, combine chocolate chips and cream in a microwave-safe bowl. Heat in 15-second intervals, stirring until smooth. Stir in vanilla.
- Spread ganache over brownies. Dollop caramel sauce on top and swirl with a knife. Sprinkle with flaky sea salt.
- Refrigerate until set (about 1 hour). Slice and serve. Makes 15 brownies.
