Salted Caramel Ganache Brownies

Ingredients
For the brownies:
  • 10 Tbs. (1 1/4 sticks) unsalted butter, cut into pieces
  • 1 1/4 cups (7 1/2 oz / 225 g) light brown sugar, firmly packed
  • 2 eggs, at room temperature
  • 3/4 cup (2 1/4 oz / 62 g) cocoa powder
  • 6 Tbs. (1 1/2 oz / 45 g) all-purpose flour
  • 3/4 tsp. salt
  • 2 tsp. vanilla extract
For the chocolate ganache:
  • 1 cup (6 oz / 170 g) dark chocolate chips
  • 1/2 cup (4 fl. oz / 125 ml) heavy cream
  • 1/2 tsp. vanilla extract
To finish:
  • Salted caramel or dulce de leche sauce
  • Flaky sea salt for garnish
Directions
  1. Preheat oven to 350°F (180°C). Grease a 9-by-13-inch baking dish with nonstick spray.
  2. In a large microwave-safe bowl, combine butter and brown sugar. Microwave in 30-second intervals, whisking between, until melted and glossy.
  3. Add eggs, whisk until smooth and slightly lightened in color.
  4. Fold in cocoa powder, flour, salt, and vanilla just until combined. Spread batter evenly in the pan.
  5. Bake 15–20 minutes, until edges are set and a toothpick comes out with a few moist crumbs. Cool completely.
  6. For the ganache, combine chocolate chips and cream in a microwave-safe bowl. Heat in 15-second intervals, stirring until smooth. Stir in vanilla.
  7. Spread ganache over brownies. Dollop caramel sauce on top and swirl with a knife. Sprinkle with flaky sea salt.
  8. Refrigerate until set (about 1 hour). Slice and serve. Makes 15 brownies.
