For those who asked at dinner, here’s the recipe for the apple sauce I used:
Rustic Apple Sauce with Beurre Noisette
Ingredients:
- 6 Granny Smith apples, peeled, cored, and chopped
- ½ cup brown sugar (adjust to taste)
- 3 tbsp unsalted butter
- 1 tsp Chinese five spice blend
- ½ cup water (or apple cider for extra flavour)
- 2 tbsp unsalted butter (for the beurre noisette)
Method:
- In a large pot, combine the apples, brown sugar, butter, Chinese five spice, and water (or cider).
- Bring to a gentle simmer, cover, and cook on low heat for 2 hours, stirring occasionally.
- Once the apples are tender and caramelized, crush them with a potato masher until rustic and chunky in texture.
- In a small pan, melt 2 tbsp butter over medium heat until golden brown and nutty (beurre noisette). Immediately stir this into the apple sauce.
- Serve warm alongside pork, poultry, or even as a rich condiment with cheese boards.
