He moved to Canada in 1999, in Vancouver at 5 Sails in the Pan Pacific then moved to Whistler at ARAXI and Il Caminetto di Umberto.
In 2009, he moved to Toronto and was been a part of an exciting restaurant life there at Nota Bene, L’Unita and Jacobs & Co.
Otta has been a restaurant proprietor for the past 7 years in Toronto at l’Avenue Bistro, Tinto Bar de Tapas and Estrella Taqueria.
He has always been an outdoor person, so a year ago he moved to Creemore where he opened QUINCE BISTRO. There he’s had the pleasure to meet many of you at the restaurant as well as cater to locals and tourists year-round.
He’s offered local-fresh-seasonal cuisine, with many dishes based on his early years growing up in Europe, he loves to support our local farmers. With the global movement to healthy dishes, he’s excited to offer more healthy choices on our menus.
Otta has also been certified Sommelier for the past 16 years. If you have any wine or food related questions please do not hesitate to stop him for a chat or email him at
[email protected] with your inquiries.
Otta will be manage the day to day operations in the kitchen, ensuring the highest level of quality and standards are met. He will still be present and overseeing Quince Bistro and sharing his time with Mad River.
He is looking forward to this summer at Mad River and has high hopes that this virus will soon be over, so he can meet everyone in person and showcase his talents.
New Pro Shop Staff
I would also like to welcome Myles and Marshall to the Golf Operations Team. Brian will officially introduce them and provide some background in his Mad Post article.
We are confident they will bring a wealth of experience and expertise to Mad River and once we are permitted to start hosting larger gatherings and events, they will play critical roles in our delivery of events.
More COVID news
Booking this morning was a challenge for many of you and for the golf shop team as well, primarily as a result of the tremendous traffic which slowed the system. This was exacerbated by the number of bookings occurring for the entire week.
This will normalize now that we are up and running and booking will continue under our normal procedures one week in advance, with days in between being booked already or sporadically as needed.
An important thought I’d ask everyone to keep top of mind, especially at the start of the season is, 2020 will not be golf as usual. There will be significant changes to our typical operating systems this year, especially before and after your rounds, and we ask for your patience and tolerance as we work through this period.
We will be sending out a short video this afternoon that will help clarify some of the critical Procedures & Protocols, particularly for your first visit to the Club.
We look forward to seeing everyone and welcoming you back to the Club this season.
